Gluten Free Pancakes 🥞 recipe

 

As many of you may remember, I used to eat mainly gluten and wheat free. I am not allergic, I don’t require an EPI pen, but my stomach suffers really bad if I overload on it too much.

Recently I’ve notice a huge relapse on my stomach being bloated every day, tiredness, IBS flare ups, and my skin is just awful and spotty at the moment. 

A week ago I decided to start cutting it out again, and to start cooking more food not containing it.

It’s such a hard one for me, especially with the business, and taste testing. So I will still sample very small amounts. But I hope to start producing more gluten free suitable bakes as well. 

Today I really fancied having pancakes, so I dragged out my old recipe from years ago to bake. I even served a stack to Michael, and he said they were really nice, and wouldn’t have known. 

This is a really easy gluten free pancake recipe to follow, which is also dairy free for the pancake mixture. (My topping contained dairy) 

This amount makes 16 light and fluffy pancakes 🥞

230g plain gluten free flour
3 tsp baking powder
2 egg
300ml oat milk
1.5 tsp caster sugar
Plus oil to cook with.

I used Rapeseed oil to cook, and I used a pancake frying pan, which has four round segments in it, to hold the shape. Mine was purchased from Amazon.

Mix together the flour, baking powder and sugar.

In a separate bowl, mix together the 2 eggs and milk.

Then mix the wet ingredients with the dry until combined and no lumps. I then left my mixture for 30 mins in the fridge to rest.

When it’s time to cook the pancake mixture, simply heat your frying pan and add some oil, then turn down to a medium heat. Pour in small amounts of mixture (this amount can make up to 16 pancakes).

Cook on first side until the top starts to bubble. Then flip over, and again cook until mixture all set. Takes around 2 mins per side, but keep an eye on it, so it doesn’t burn.

I stacked mine up today with hazelnut spread, blueberries and maple syrup drizzle, with a squirt of spray cream
